Healthy Magnum Ice Cream Bars

I have a major sweet tooth problem…thanks a lot Granddad. Typically I try not to keep sweets in the house because I know if they are easy to access I will eat them. But, my boyfriend and I clearly aren’t on the same page because he keeps stocking our freezer with rocky road ice cream. Ice cream is one of my weaknesses and once I start, I can’t stop.

I was on IGTV the other day when I stumbled upon a video of someone making Magnum ice cream bars. They were using ingredients like coconut yogurt, cashews, maple syrup, chia seeds and raspberries. The bars looked amazing even with all the healthier substitutions. So, I decided to give them a go!

I ordered some silicone popsicle molds on amazon and bought all of the ingredients. They were extremely easy to make and tasted delicious.The molds are on the smaller side which makes these ice cream bars the perfect guilt free treat after dinner. But, if you don’t like coconut then these ice cream bars probably aren’t for you.

Ingredients for Ice Cream Base:

  • 1/2 Cup Coconut Butter
  • 1 Cup Coconut Yogurt
  • 1/4 Cup Maple Syrup
  • 1/2 Tsp Vanilla
  • 10oz Presoaked Cashews

Ingredients for Raspberry Filling:

  • 1 Cup Raspberries
  • 1/4 Cup Maple Syrup
  • 1/2 Tsp Vanilla
  • 2 TBSP Chia Seeds

Ingredients for Dip:

  • White Chocolate Melting Wafers


  1. To make the ice cream base, add all the ingredients listed from top to bottom into a blender or food processor. Blend ingredients until smooth.
  2. While ice cream base is blending, combine raspberries, maple syrup and vanilla into a small mixing bowl.
  3. Using a fork, mash the raspberries and whisk them until they become a jam texture. Once they are mixed add in the chia seeds.
  4. Fill up your silicone molds half way with the ice cream base. Add a layer of raspberry jam. Finish filling up the mold with the rest of the ice cream base.
  5. Push the popsicle sticks into the center of the molds and place them in the freezer
  6. Once the popsicles are frozen, put the white chocolate melting wafers into a microwave safe bowl and heat for 30 seconds. Stir the chocolate to make sure it doesn’t burn. Keep heating until chocolate is smooth. Remove the ice cream bars from the mold and dip them into the white chocolate.
  7. Enjoy!
